Here's the thing, I'm not very good at cooking. However, I like to think I make up for it with my baking skills. Maybe it's because I always use the proper ingredients (ie full-fat, real sugar and a friendly dash of gluten), or maybe it's because I add chocolate chips whenever possible. Whatever the reason, I seem to make rather delicious treats.
This is a recipe we have been making in my family since I was little (scroll down to the end of this post for the proof). I originally posted it about 5 years ago on my old blog, and when I recently deleted my old blog a few people reached out to me asking for it. So I thought I would post it again...
Chocolate Zucchini Bread
2 cups sugar
1 cup oil
1 tsp vanilla
2 cups grated zucchini
2 rounded tbsp cocoa powder
3 cups flour
1 tsp cinnamon
1 1/2 tsp baking powder
1 tsp baking soda
1/2 cup chopped pecans
1/2 cup chocolate chips (though I always add at least a cup)
preheat oven to 350F
beat eggs; add oil and sugar; beat well.
add vanilla, zucchini and chocolate;
mix dry ingredients together. add to wet mixture.
add nuts and chocolate chips
bake in greased pans - either 2 standard loaf pans or 6 tiny loaf pans
bake for 40 - 60 minutes
Typically I tend to bake this recipe in the standard loaf pans, though I have added some pictures below from my previous post when I used the smaller loaf pans. I was also fancier then and wrapped them nicely.
